My hope is that you will fall in love with cinnamon all over again after reading this page.

Freshly ground cinnamon is by far the best tasting and aromatic form of cinnamon.

Purchase some cinnamon sticks from your local food co-op or other source. My local co-op has the best price around on stick cinnamon. Note that cassia cinnmamon contains coumarin. This should not be consumed in large quantities. You should do the research and decide for yourself what you're willing to tolerate. I'm not too concerned because I don't eat a lot of it.

Buy a blade style coffee grinder. Mine is a KitchenAid BCG100 and I paid $30 for it at Target. The lid doesn't form a complete seal over the bowl and it can make a dusty mess when grinding. I put a plastic sandwich bag over the stainless bowl before putting the grinding cap on. The bowl separates from the base and is easy to clean.

Break 2 ounces of sticks into 1/2" or less pieces and put into the grinder.I purchased a pair of pliers to make this task easy. Grind for 30 seconds or so. You may need to make your pieces smaller if the grinder locks up.

Pour the result into a fine mesh sieve and shake is around a bit over a large bowl. If you cannot tell the difference between a fine meshed sieve and one that isn't fine, shop around and look at them. You'll know it when you see it. It's critical to get a fine meshed one so that you can produce a fine cinnamon powder without the larger particles. Put the larger pieces aside for the next time you grind. Eventually they break up.

DO NOT GRIND Cloves or Allspice, it will damage/ruin the plastic.

You gotta love the result. Strong, sweet and oh so good. I'll never go back to store bought ground cinnamon.

I hear Vietnamese cinnamon is sweeter and better. However, keep in mind this is cassia, not Ceylon. The coumarin content is probably what makes it sweeter. However, coumarin is not a good thing if you're going to be eating this stuff regularly.
